Lagavulin uses a particularly slow distillation that gives it its characteristic richness. However, more recent bottlings have a distinct cereal note caused by a shortening to fermentation time introduced to increase production; during the 1990s Lagavulin unexpectedly soared in popularity and is now one of the most in-demand whiskies on Islay.
