Cognac Sponge Edition No.5  is a marriage of two casks of Fins Bois. One heritage.90 and a heritage.92. with a 50/50 mix between the two casks. 

Nose: Some sweet mineral and cereal notes, fresh baked patisseries with a hint of crushed almond, dried apricots and melon, a touch of citrus and honey. 

Palate: Whipped fudge, dark cocoa nibs, a touch of vanilla pod, pastels, warming sweet spices,  with a soft herbal note giving a rich mid palate, green grapes and white chocolate, some oily tones leading to a long and lingering finish.
